DRAGON FRUIT RICE PUDDING INGREDIENTS: seeds from 4 cardamom pods 15g (half ounce) butter 115g (4 oz) long grain rice 25g (1 oz) flaked almonds 1 pint milk (600 ml) 55g (2 oz) soft brown sugar 2 dragon fruit Crush the cardamom seeds with a mortar and pestle. Then melt the butter into a saucepan, and add the seeds with the rice and cook for 1 minute on a gentle heat. Add to this the almonds and the milk and bring the mixture to the boil...slowly. Cover the saucepan with a lid and gently simmer until the rice has absorbed most of the milk- about 20 minutes...stirring gently every now and then. The rice should be tender. Stir in the sugar. The flesh of the dragon fruit is inedible...Cut one of the fruit in half and scoop out the flesh into a bowl. Crush with a fork and stir this into the rice. Serve garnished with slices from the remaining fruit. Dragon fruit is very nice served on a bed of crushed ice too. Just crush the flesh of a dragon fruit with a fork and serve it on crushed ice with a sprinkling of icing sugar. |
