MEXICAN MOLE PASTE

Saute in 2 tbs oil for two minutes:

     1 cinnamon stick
     5 cloves
     8 black pepper corns

Add:

     4 tbs raisins

and saute for anther two minutes. Remove from pan.

In another 2 tbs oil, saute:

     2 tbs masa harina (fine corn flour)
     4 tbs chilli powder

Add and cook for 2 minutes:

     4 tbs peanut butter
     2 tbs sesame paste (tahini)
     1 tbs almond butter

Add:

     4 tbs chipotle peppers in adobo sauce
     4 tbs minced onion
     2 tbs minced garlic
     1 oz unsweetened dark chocolate

Mix and cook for five minutes and add:

     the raisin mixture
     1 28oz tin tomatoes

Simmer for fifteen minutes, let cool, remove cinnamon stick, 
and blend or process until smooth.
