Wheat & Dairy free shortbread biscuits (vegan infact!)

Ingredients - for 12 large biscuits


100g white granulated sugar
200g margarine (easy to find vegetable margarine)
100g ground oats
100g rice flour
100g corn flour

If you have difficulty getting rice or corn flour
then you may use just one or the other.
In this case use 150g of the flour and 150g of Oats.
The oats are most important.

Optional extras

1 tablespoon of
currants or sultanas
or coconut flakes
or chopped nuts
or chocolate chips
Nuts & chocolate chips together are nice !
You get the idea - whatever you like right !

Instructions

Cream together sugar and margarine until light and fluffy.
Add all remaining ingredients. Mix WELL.
Make round patties with hand (messy and sticky) and place on greased baking tray.
Place baking tray in middle rack of oven preheated to 160 degrees centigrade.
Bake for 25 minutes. Remove and allow to cool on cooling rack.
