Chicken
Sandwich

Ingredients :
|
• Bread slices,
crust removed - 6-8
• Chicken breast, boiled &
shredded - 1
• Mayonnaise sauce - 1/2 cup
•
Lemon - 1/2
• Salt & freshly ground pepper to
taste

Method :
• Wash the breast.
• Boil with 1/2 tsp salt and 1/2 cup water till tender
or pressure cook with 1/2 cup water and 1/2 tsp salt to give 1
whistle.
• Boneless chicken and flake them into tiny
pieces.
• Squeeze lemon juice on them.
•
Sprinkle some salt & pepper.
• Mix the cool
chicken pieces with the mayonnaise sauce.
• Spread
over the slice.
• Cover with another slice and cut
into triangles.
• Store till serving time in a damp
cloth.
Note :
• They can be served as
open sandwiches also.
• Cut the slices with a biscuit
cutter or katori into small rounds and spread the chicken
mixture evenly.
• Decorate with parsley or coriander
leaf & serve on a bed of shredded cabbage or lettuce.
