Testing the Protein in Flour

The trick for testing the protein is simple. Using onecup of water combine with the amount of flour I listed
below and make a sticky dough. This is not 100% accurate, but definitely easier than trying to get a straight answer from the manufacturer.


14g protein------------bread----------------2C packed flour plus 1T
13g------------------unbleached------------2C packed flour plus 2T
12g------------------all purpose------------2.25 C
11g------------------all purpose------------2 1/3C plus 1T
10g------------------all purpose------------2 1/2C
9g---------------southern all purpose------2 1/2C plus 2T
8g------------------------cake---------------2 3/4C
