Michelle's Stuffed Cabbage Casserole - tweaked for WW

1 1/4 pounds Extra lean ground turkey
1 large onion -- chopped
2 garlic cloves -- minced
2 cups fat-free chicken broth
1 cup white rice
28 ounces tomato sauce
2 tablespoons brown sugar
1 tablespoon white vinegar
1 large head of cabbage
crushed red pepper -- to taste
black pepper -- to taste

Cook the meat, onion and garlic. Drain and then add crushed red pepper
and black pepper to taste. Add the chicken broth and rice. Cover and
cook on low for 20 minutes or until rice is cooked.

In a separate saucepan combine tomato sauce, brown sugar, and vinegar and
cook on low.

Bring a stock pot of water to a boil. Cut the head of cabbage in 1/2 and
core. Drop in water and cook until the leaves soften.

One the meat and rice mixture is cooked add 1/2 of the sauce mixture and
stir thoroughly. Take off of heat. And take the remaining sauce off of
the heat.

In a 3 quart dish place a layer of cabbage, then meat, then cabbage, etc. 
Top off with extra sauce.


Put into 350 oven and cook for at least 30 minutes.

Then each dish is 4 big servings.
