Cheesy Chicken Manicotti

6 1/3 ounces manicotti -- about 11 tubes
28 ounces crushed tomatoes -- w/ Italian seasoning
1 large egg
1 3/4 cups part-skim ricotta cheese
4 ounces boneless skinless chicken breast -- cooked and diced
3/4 cup frozen chopped spinach -- thawed and drained
4 cloves garlic -- minced
1 tablespoon basil
3/4 cup part skim milk mozzarella cheese -- shredded
1/2 cup grated parmesan cheese

Preheat oven to 350.

Cook manicotti shells in boiling water according to the package
directions, omitting oil. Drain and rinse in cold water. Set aside.

Coat a 9x13 pan with cooking spray. Spread 1 cup of crushed tomatoes
evenly over the bottom of the pan. Set aside.

For filling, in a large bowl, stir together egg, ricotta cheese, chicken,
spinach, garlic, and seasoning. Stir in 1/4 cup each of mozzarella cheese
and Parmesan cheese.

To assemble, spoon cheese mixture into manicotti shells and place filled
shells in a single layer in baking dish. Spread remaining crushed
tomatoes on top. Sprinkle with remaining cheeses and bake about 30
minutes.
