Orange Teriyaki Chicken Tacos

1 lb Skinless Boneless Chicken breast halves (2 to 3 uncooked, thawed breast halves)
1 Seedless Orange, peeled – remove all skin and core fragments
2 tbsp Teriyaki sauce
1 tbsp Worcestershire sauce
2 tbsp Sugar
1/8 cup Hungry Jack Buttermilk pancake mix*
5 Soft tortillas
1 tsp Peanut oil

Cut chicken breasts into small pieces about an inch or two in size. Place in a 2-quart bowl.
Separate the Orange slices and puree. Add to chicken.
Mix together with spoon until well blended.
Add Teriyaki and Worcestershire sauces and Sugar. Stir until mixture is one uniform color.
Marinade in the refrigerator for 45 minutes.

Oil a skillet or frying pan with Peanut oil.
Pour mixture into pan and cook covered for 5 minutes over medium-high heat, stirring occasionally.
Remove lid and sprinkle in Pancake mix, stirring constantly.
Reduce heat and simmer for 3 minutes or until thickened, stirring often.
When mixture has thickened, serve on warm soft tortillas.

Topping suggestions: diced tomato or green onion.


* do not use the Hungry Jack COMPLETE mix.
