Xoandre's Stuffed Chops

2 Top Loin Pork Chops

Stuffing Mix Ingredients:
4 tbsp Butter
4 cloves Garlic - minced
4 tsp Parsley
4 tsp Minced Onion
1 cup Seasoned Bread Crumbs
2 dashes Chili Powder
1 tsp ground Sage
2 tbsp Ketchup
1 dash Rotisserie Chicken Seasoning

Glaze Topping Ingredients:
3 tbsp Apple Jelly
2 tbsp Butter
2 dashes Allspice
1 dash Rotisserie Chicken Seasoning

For Stuffing:
Sautee the Garlic, Onion, and Parsley in 4 tbsp of the Butter until golden and tender. Reduce heat to low. Stir in Chili Powder and Sage until well blended. Remove from heat. Stir in Bread Crumbs and Ketchup.

Pork Chops:
Trim fat from Pork Chops. Cut a pocket into Chops from fat side almost fully through.

Spoon Stuffing mixture into Chops. Secure open edge with wood toothpicks. Bake in 375 degree oven for 35-45 minutes.

For Glaze Topping:
Meanwhile, combine Apple Jelly, Butter, Allspice, Chicken Seasoning in a small bowl. Microwave for four minutes on 50% power. Stir and allow to cool slightly.

In the last 5 minutes of baking, spoon the glaze onto the Pork chops.

SERVING SUGGESTION: Keep one tablespoon of Stuffing Mixture and add to mashed potatoes. Mix well and salt to taste.
