Appetizer Potato Balls


Ingredients

2 cups mashed potatoes

2 cups finely chopped ham

1 cup shredded Swiss cheese

1/2 cup mayonnaise

1/4 cup chopped onion

2 eggs, beaten

1 Tablespoon dry mustard

1/2 teaspoon salt and pepper

3-1/2 cups crushed corn flakes

Combine all ingredients except corn flakes.

Shape into 1-inch balls. Roll in crushed corn flakes.
Place on lightly greased cookie sheet.

Bake at 350 degrees for 20 to 30 minutes.
Blue Stuffed Mushrooms


Ingredients

4 ounces bleu cheese

4 ounces cream cheese

1 Tablespoon half & half

14 small mushrooms, stems removed

14 small pecan halves

14 small fresh basil leaves

In a medium bowl, combine the blue cheese and the cream cheese.

Beat them together with an electric mixer so that they are smooth. Add the half & half and beat it in so that the mixture is fluffy.

Fill the mushroom caps with the cheese mixture. Top each with a pecan half and a basil leaf.
