Chicken with Rice (Kao Mun Gai)
Ingredients:
Rice (Preferred Jasmine Rice)
Chicken ( any part that want to eat)
Green Coriander
Coriander root (if cannot find..ok . Don't worry too much on this part)
Grounded Pepper (Black or White)
Cooking Oil
Ginger
Chilli Pepper
Yellow Bean Sauce
Garlic
Sugar
SoySauce or salt
Chicken:
Clean Chicken
Method 1: Stream Chicken
Put chicken in a stream pot. Stream until done.
Keep the chicken oil.
Method 2: Boiled Chicken
Separated the prepared chicken into 2 parts: One for soup base, another one
is to eat with rice.
Put chicken into the boiling soup. Boil until done only. Don't boil too long.
Separate soup and Chicken. (Except the part that tend to leave in soup.)
Rice:
Clean rice as usual.
Method 1: Nice looking rice.
Fried the clean rice ( only the grain) with the Chicken Oil from Chicken Method 1 or use the cooking oil instead, until the rice color changes to solid white.
Move the rice to a rice cooker. Add soup (the same method as cooking stream
rice, but change water to soup (from Chicken Method 2)), a few pieces of slice
ginger, and a few peeled garlic cloves. Then, let's the cooker do the job!!
Method 2: Soften Rice
Same as Method 1, but do not fried the rice before cooking.
Sauce:
Method 1: Spicy
Yellow Bean Paste
Chopped Pepper Chilli
Sugar (Trace)
Chopped & Smashed Ginger
Chopped Garlic
Mixed them all:
Approx ratio: Yellow Bean Paste: Ginger : Garlic = 2.5:1:1
Add sugar and Pepper Chille as wish.
Dilute with chicken soup.
May add coriander leaves.
Method 2:
Sweet Black Soy Bean
Cut the chicken the way you like to eat. Top with green coriander.
Anyone who like the chicken blood. Suggest to buy the cooked one from store,
unless you really know how to cook it.
Enjoy eating with the rice.
Usually we have soup with the dish. The remaining one is great. Add any kind of veggie you like, and lots of white/ black pepper. Adjust the taste if you want ..Fish sauce or Light Soy Sauce, Black Mushroom Soy Sauce....
Note:
Soup: Use RoomTemp. water and heat up because we want to get the good part out of the chicken cells (Cell ruptured) for the soup.
Meat: Using fixed cell method. Let's the heat from boiling water/soup cook
the cell membrane first. The juicy part will be kept within the cell. Do not
boil too long because we want to have chewable meat.
Rice: Cook the uncooked rice with oil before regular cook to keep the rice in-shape.
