Christmas Cookies

These cookies are good any time of year but I only seem to make them at Christmas.


PEANUT BLOSSOM COOKIES

1/2 c. margarine1/3 c. peanut butter
3/4 c. sugar1 t. vanilla
1/2 c. br. sugar1 egg
1 3/4 c. flour1 t. baking soda
1/2 t. salt7 oz bag chocolate kisses or stars

Cream butter and sugars; add egg and beat well. Stir in peanut butter. Sift together flour, soda, and salt. Add to creamed mixture. Add vanilla. Roll in 1" balls and roll balls in granulated sugar. Bake on ungreased cookie sheet for 8 minutes at 350*. Remove from oven press and immediately press a chocolate kiss or star on the top. Return to oven for 2-5 minutes longer. Makes 2 1/2 dozen.



COCONUT TOP HATS

1/2 c. margarine1/2 c. br sugar1 egg yolk
1/2 t. vanilla1 1/2 c. flour1/4 t. salt
Coconut Topping:
2 c. chopped coconut1/2 c. pd sugar
1 T. water1 egg white
Chocolate Topping:
1/2 t. vanilla1 c. semi sweet cho. chipsMarashino Cherries

Cream butter, gradually add sugar, beat in egg yolk and vanila. Blend in flour and salt. Shape dough into a 10" roll. Wrap in Wax paper. You may chill overnight.

Combine coconut, sugar, unbeaten egg white, water, and vanilla for coconut topping. Cut cookie dough into 1/8" slices. Place on greased cookie sheet. Top with 1 teaspoon of cocount topping. Bake at 375* for 10 minutes. Cool.

Melt chocolate chips, place 1 teaspoon of melted chocolate over each cooled cookie. Decorate with a cherry. Makes 4 dozen small cookies.



Peanut Clusters

1 lb white chocolate    1 c. miniature marshmallows
1/2 c. peanut butter    2 c. Rice Krispies
1 c. salted peanuts     1 c. stick pretzel (small)
Melt chocolate; add peanut butter and mix well. Add remaining ingredients; stir well. Drop by teaspoon onto waxed paper. Let cool.
Very easy and quick to make


Skillet Cookies

This is a strange recipe but they are good. I'm always looking for a recipe that is different to add to the tray of cookies I give to family or friends. This works best if you have one of the heavy old fashioned cast iron skillets.

1 c. chopped dates             1/2 c. butter or oleo
3/4 c. sugar                    1 beaten egg
1/4 c. chopped peanuts         1/4 c. small gumdrops
1 t. vanilla                   2 cups Rice Krispies
powdered sugar
In a heavy skillet, over low heat, stirring often, cook butter, beaten egg, sugar, and dates until dates pull away clearly from the sides of the skillet. Remove from heat. Add peanuts, gumdrops, and vanilla. Pour over Rice Krispies. Stir. Set aside until cool enough to handle. Roll into 1" balls. Roll in powdered sugar.


SUGAR COOKIES

These cookies are simple to make and they melt in your mouth!

1 cup oleo                        1 tsp vanilla
1 cup butter flavored oil         1 tsp. salt
1 cup powdered sugar              1 tsp. cream of tartar
1 cup sugar                       1 tsp soda
2 eggs                            4 cups plus 6 T. Flour


Mix the first four ingredients together; add remaining ingredients and mix well. Form into balls the size of small walnuts. Place on ungreased cookie sheet. Flatten with a glass dipped in sugar (use colored sugar) or cookie stamps. Bake at 350 for 15 minutes or until lightly brown.
