Mini Ring Noodle Salad

Very easy, everyone will ask for the recipe!

      2 boxes Mini Ring Noodles OR 1 bag acini de pepe pasta 1 cup grated carrots 2 ribs celery finely chopped 1 sweet onion finely chopped 2 cucumbers chopped 1-1/2 cup sugar 1-1/2 cup Hellman's Mayo 1/2 cup apple cider vinegar Salt and pepper to taste Prepare noodles according to package directions. Rinse and drain. Add vegetables and mix. In a separate bowl, mix mayo and vinegar and sugar. Add mayo mixture to noodle mixture. Add salt and pepper to taste. Best if refrigerated for 24 hours.

Spinach and Strawberry Salad

      1 pound fresh spinach leaves, stems removed, wash and dry 2 cups fresh strawberries, hulled and halfed Place the spinach in a large salad bowl. Pour in dressing and toss gently to mix. Serve right away.

      Dressing

      1/4 cup vegetable oil 2 T. sesame seeds 1/4 cup cider vinegar 1 T. poppy seeds 1/3 cup sugar 1/2 T. minced onion Dash of Worcestershire sauce(optional) Place the oil, vinegar, 1/4 cup sugar, onion, sesame seeds, poppy seeds, and Worcestershire sauce in a food processor or blender. Mix until homogenized. Taste and add additional sugar if desired.


This salad sounds like a strange combination but it is delicious! Raisins are something I usually omit from recipes but a wouldn't think of it in this salad. You really must try it, it will soon be a favorite.

BROCCOLI SALAD

1 Head broccoli(separate pieces)   1 small red onion, sliced
1/2 c. raisins             1/2 lb. cooked, crisp, crumbled bacon
1 c. sunflower seeds (salted)

Dressing:
1 c. Mayonnaise       2 Tbsp. vinegar        1/4 c. sugar

Mix dressing and pour over salad.  Let set.



CHICKEN SALAD WITH POPPY SEED DRESSING

Poppy Seed Dressing
1/3 c. wine vinegar or lemon juice           3 T. Oil
3 T. Honey                                   2 1/4 tea. poppy seed
1 T. minced green onion                      1 1/2 t. Onion Powder
3/4 t. seasoning salt

Thoroughly combine all ingredients; Chill

Cook two boneless chicken breast, cut in cubes after cooking.  Make 
a salad using lettuce, celery, green onions, cut up chicken, and
2-4oz slivered almonds.  Serve with the Poppy Seed dressing.


CURLY NOODLE SALAD


1 (1 lb)box curly noodles 1 tsp table mustard 1 cucumber, thinly sliced garlic salt 3/4 cup oil 1 large onion, chopped 1 cup sugar 1 c. apple cider vinegar 1 carrot Cook noodles as directed on the box, leaving them a little firm. Slice the cucumbers with the peel on, paper thin. Shreed the carrot. Mix the above ingredients. Mix the oil, sugar, vinegar and mustard together to make the dressing. Pour over the noodles. Mix well


CARAMEL WALDORF SALAD


8 oz cream cheese 12 oz Cool Whip 1/3 cup brown sugar 2 tsp WATKINS caramel flavor 4 cups chopped apples, unpeeled 1/2 tsp WATKINS Vanila extract 1 cup chopped nuts Cream together cream cheese, brown sugar, caramel flavor and vanilla extract. Fold in the Cool Whip. Then add the apples and nuts. Tastes great made the night before, apples do not turn brown.
