PANNUKAKKU


(Finish Pancake)
5 eggs                     1 tsp. salt
3/4 c. sugar               2 c. milk
1 c. flour                 1 stick margarine, melted

Beat eggs until thick and lemon colored. Add sugar and beat until sugar is dissolved. Stir salt into flour and add to egg mixture alternately with milk, stirring until well blended. Add 1/4 cup of melted margarine and blend. Pour the other 1/4 c. of melted margarine into 9 X 13 inch pan. Pour batter over the margarine. Bake in preheated 375 oven for 35 minutes. Serve warm with fresh strawberries, your favorite Jam or Jelly, or sprinkle with sugar and cinnamon.


RIESKA


(Finnish Flat Bread)
3 c. White flour                  2 c. buttermilk
1 1/2 c. whole wheat flour        1/4 c. sugar
3 tsp baking powder               2 tsp. salt
1 tsp baking soda                 1/2 c. shortening
Sift dry ingredients together. Cut shortening into dry ingredients until mixture has a coarse crumb texture. Add buttermilk and stir until dough clings together. Knead on a lightly floured board for several minutes. Roll into a round, flat loaf to fit an ungreased cookie sheet or pizza pan. Prick entire surface with a fork. Bake in a preheated 350 oven for approx 20-25 minutes, until golden brown. Great with stew or chili!

Quick Cinnamon Rolls


(Grandma's Recipe)
2 eggs                    1 c. milk
1 c. sugar                2 tsp baking powder
1 c. oleo                 3 cups flour

Filling: 1/4 cup brown sugar, 1 T. cinnamon, 3 T melted oleo or butter

Mix oleo with flour, sugar, and baking powder, using a pastry cutter, fork, or your hands, until particles are pea size. Combine slightly beaten eggs with milk and add to flour mixure, mixing ONLY until flour is moistened. Knead gently on floured board until dough is workable. Roll out on flowered board to 1/2" thick rectangle. Spread with melted oleo, brown sugar and cinnamon. Roll the dough into a log and cut into 1" slices. Place on buttered pan. Bake at 400 15-20 minutes.


IRISH CAKE

3 c. flour            grated lemon rind
3/4 c. sugar          1 3/4 c. applesauce
1/2 tsp salt          1/2 tsp cinnamon 
3 egg yolks           1/4 tsp ground cloves
1 c. butter
Mix first six ingredients together. Press tightly into oblong pan. Spread applesauce, cinnamon and cloves over dough. Bake at 350 degrees 40 minutes.
