"Rule of Thumb" for cooking temperature

* Double the Diameter of the D/O to determine the correct number of coals for 350 degrees; i.e. for a 12 inch D/O, use 24 briquettes to achieve a temperature of 350 degrees.
* Adding 1 briquette to the top and 1 to the bottom raises the temperature 15 - 20 degrees.
* For baking, use 2/3 of the coals on the lid, 1/3 under the oven.

Mountain Man Breakfast

1/2 lb bacon (or pre-cooked sausage)
Med onion
2 lb. bag of hash brown potatoes
1/2 pound of grated cheddar
1 dozen eggs
Small jar of salsa (optional)

The recipe requires 6-9 bottom coals and 12 -15 top coals.

Pre-heat 12" Dutch Oven. Slice bacon and onion into small pieces and brown in the bottom of the DO until onions are clear. Stir in the hash brown potatoes and cover; remove cover and stir occasionally to brown and heat potatoes (15-20 minutes) Scramble the eggs in a separate container and pour the mixture over the hash browns. Cover and cook until eggs start to set.(10 - 15 minutes)
Sprinkle grated cheese over egg mixture, cover and continue heating until eggs are completely set and cheese is melted. Optional: cover cheese/egg mixture with a small jar (~ 1 cup) of SALSA. Cover and cook for an additional 3-5 minutes. Slice and server like quiche. Serves 6.

Breakfast Casserole

6 eggs
1 lb. Sausage cooked and drained
4 slices of bread cubed
2 cups of cheese
2 cups of milk
2 tsp dry mustard
salt and pepper

Mix ingredients in 2 qt casserole pan, place in pre-heated dutch oven, place over about 8 charcoals and place 10 to 12 charcoals on top. Cooking time approx. 1 hour (350 degrees – 45 min). Serves 6 to 8 people.

Baked Spaghetti
1 cup chopped onion
1 cup chopped green pepper
1 tablespoon butter or margarine
1 can (28 oz.) tomatoes with liquid, cut up
1 can (4 oz) mushroom stems and pieces, drained
1 can (2 1/4 oz) sliced ripe olives, drained
2 teaspoons oregano
1 pound ground beef, browned and drained, optional
12 oz spaghetti, cooked and drained
2 cups (8 oz) shredded chedder cheese
1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
1/4 cup water
1/4 cup grated parmesan cheese

In a large skillet, saute onion and green pepper until tender. Add tomatoes, mushrooms, olives, and oregano. Add ground beef if desired. Simmer uncovered for 10 minutes. Place half of the spaghetti in the DO or in a greased, 13 x 9 x 2 inch baking dish. Top with half of the vegetable/meat mixture. Sprinkle with 1 cup chedder cheese. Repeat layers. Mix the soup and water until smooth and pour over the casserole. Sprinkle with parmesan cheese. Bake (uncovered if using baking dish) at 350 degrees for 30 to 35 minutes or until heated through. Yield about 12 servings.

Pork Chops & Vegetables

Ingredients:
6 (1" thick) pork chops
3 tbs butter, melted
3 carrots, cut 1/2" slices
1-1/2 cups fresh green beans, cut 1" lengths
3 small potatoes,peeled, 1/2" cubes
1 tsp basil
6 (1/4 oz) instant onion soup mix
2 cups water

Directions: Brown chops on both sides in butter in bottom of oven, drain. Place vegetables in bottom of oven and replace chops on top. Combine dry soup mix and water, mixing well. Pour over chops and bring to a boil. Cover and reduce heat, simmer 45 minutes or until chops are tender.

Wild West Wagon Train Supper

4 Cups wagon wheels (rotelle)
1 pound extra lean ground beef, fresh or frozen
1 teaspoon olive oil
1 large onion (for 1 cup chopped)
1 ½ teaspoons chili powder or to taste.
½ teaspoon garlic powder
1 jar (16 ounces) mild salsa
1 can (10 ¾ ounces) chedder cheese soup

Bring 2 ½ quarts of unsalted water to a boil. When the water reaches a rapid boil, add the pasta and cook until tender, 7 minutes or precook pasta at home and pack in a ziplock bag. Heat the oil over medium heat in an extra deep 12 inch skillet or dutch oven. Peel and coarsely chop the onion, adding it to the pan as you chop. Cook until the onion begins to soften, 2 minutes. Add the beef to the skillet or D/O and raise the heat to high. Add the chili powder and garlic powder. Cook, turning and breaking up the meat, until it begins to crumble and brown, about 5-6 minutes. Add the salsa and the soup, and stir well to combine. Drain the wagon wheels and add them to the skillet. Stir until the pasta is covered with sauce. Serve at once. Note: If you prefer spicier food, increase the heat of the salsa to medium or hot.

Sesame Oven Fried Chicken

3 lbs chicken pieces
3 or 4 tbsp cooking oil
1 egg beaten
1/2 cup evaporated milk
1 cup flour
2 tsp salt
1 tsp pepper
3 tsp paprika
1/4 tsp baking powder
3 tbsp sesame seeds

Coat the inside of the D/O with oil using a paper towel. Mix the milk and egg in one ziplock bag, mix the dry ingredients in another bag. Drop the chicken pieces into the bag with the milk mixture, then drop chicken pieces into the bag with the dry mixture. Place in D/O, skin side down. Bake for 25 minutes. Turn pieces over and bake another 25 minutes.

Mississippi Mud Cake

2 19 ounce packages brownie mix
Eggs and/or veg oil as required by brownie mix directions 1 1/2 cups coarsely chopped pecans
1 10 ounce bag mini marshmallows
1 can chocolate cake frosting

Coat the inside of the D/O with oil using a paper towel. Prepare the brownie mix according to package directions. Mix in the chopped pecans. Pour into D/O and bake at 350 (14-16 briquettes on lid, 8-10 underneath) for 30 minutes until a toothpick inserted into the brownie comes out clean. Remove from coals and top brownie mix with the marshmallows. Return to coals and bake another 5 minutes to melt the marshmallows. Liquify the chocolate frosting by heating slowly in a pan of water. Drizzle liquified frosting over warm cake. Cool completely.

Hawaiian Fluff Cake

Ingredients

Cake:
1 Yellow or Butter cake mix
4 eggs
1/2 cup plus 2 tbsp cooking oil
1 can mandarin oranges w/juice

Icing:
9 oz. Cool Whip
3 oz. instant vanilla pudding
Large can crushed pineapple w/juice

Directions:
Coat inside of D/O with cooking oil. Mix cake ingredients in D/O and bake at 350 degrees F for 30-40 minutes. Remove from coals and remove lid to cool. While cake is cooling, beat together pudding and pineapple and fold into Cool Whip. Spread over cake.
