Sharon Myers Lima Bean Casserole
4 pounds lean hamburger
1 large diced white onion
5 to 6 diced celery stalks
1 large diced green pepper
garlic powder (to taste)
salt (to taste)
pepper (to taste)
2 cans of drained baby lima beans
2 cans tomato sauce
1 large bag of unseasoned stuffing bread cubes
2 cups of grated sharp cheddar cheese
Preheat oven to 350 degrees F. In a very large frying pan saute: hamburger, onion, celery, green pepper, garlic powder, salt and pepper.
Mix well and place in a 8 quart kettle, or a very large baking pot and add: lima beans, tomato sauce and bread stuffing. Mix ingredients together well and sprinkle 2 cups of grated sharp cheddar cheese over the top of mixture. Slap a lid on the kettle and place it in the oven for 40 minutes. Remove and serve with garlic french bread and a tossed green salad.
