Grammie Cherie's Original Banana Nut Bread
(For bread machine or in oven)
3 1/2 cups sifted all purpose flour
2 eggs
1 cup sugar
3 medium size or 2 large ripe bananas, mashed
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup buttermilk (or 1/2 cup regular milk)
1/4 cup canola oil
1 1/2 to 1 3/4 cups chopped walnuts (optional)
Pour wet ingredients into bread machine first. Mash banana in bowl and add to wet ingredients along with other dry ingredients. Set your bread machine to your quick bread setting. After 5 minutes, push sides down with spatula to keep from having flour pockets. Then sit back and enjoy the aroma as it fills your house.
Recipe should be divided into two loaves if cooking in conventional oven.
To do this recipe in a conventional oven. Preheat oven to 350 degrees F.
Sift together flour, baking powder, salt, and baking soda in medium size mixing bowl. Mash bananas with a fork, and add bananas, sugar, oil, eggs and buttermilk to dry mixture. Mix thouroughly and add nuts as desired. Pour into 2 greased loaf pans.
Bake for 1 hour or until a tooth pick inserted into the center of the loaf comes out clean. Cool in pans ruffly 10 minutes and remove from pans and cool on a wire rack. If you do not want to eat it warm with melted margarine, wrap in foil or plastic wrap and let stand in cool place overnight before slicing, or freezing.
