Elephant Ears



1 package active dry yeast
1 cup warm milk
1 cup warm water
3 Tablespoons sugar
1 teaspoon salt
3 Tablespoons shortening
4 cups All Purpose flour
Oil
Soft Butter or Margarine
Sugar & cinnamon mixed for topping

Mix yeast in warm water. Add milk, sugar, salt, shortening and 2 cups flour and mix until smooth. Stir in enough remaining flour to form a soft dough. Place dough on lightly floured board and knead dough until smooth and elastic. Place in a greased bowl and turn to grease top. Cover and let rise in a warm place until doubled, ruffly one hour. Punch down and shape into approximately 12 to 16 Elephant Ears. Using your hands,(with oil on them)stretch each piece into a circular shape. If the dough tears alittle while you are stretching it, it doesn't matter. It adds a touch of class to your elephant ears. Heat 2" to 3" of oil in frying pan. (Stove setting should be medium high to high) The hotter the frying pan, the less amount of oil that will be absorbed into the Elephant Ears and the better they will taste. Fry dough in the hot oil. Turn once and the surface will bubble and blister. The color should be a light golden brown. Place on paper toweling to drain excess oil from Elephant Ear. Lightly butter and sprinkle tops immediately with a mixture of sugar and cinnamon.
