CHEESE & TOMATO PIE 
 
INGREDIANTS:
  • 350 grms Shortcrust Pastry 

  • 30 mls Oil 

  • 1 Small Onion (sliced thinly) 

  • 2 Tblsp Flour (Plain) 

  • 350 grms Ripe Tomatoes (peeled and sliced) 

  • 175 grms Grated Cheddar Cheese 

  • A Good pinch of black pepper and mustard powder 

  •  
     
    METHOD:
  • Preheat oven to 200 C 

  • Line a 23 cm Pie Plate with 1/2 the Pastry 

  • In a saucepan fry onion in the oil untill golden 

  • Mix Flour,Pepper,Mustard together then add Tomatoes and Onion and combine 

  • Cover base of pie with 1/2 the cheese then add the Tomato and Onion mix followed by remainder of cheese 

  • Cover pie with remaining pastry and seal edges. Prick top with a fork 

  • Bake for Approx 30 minutes. Serve Cold
