Original Care Bears
It started with 10 original Care Bears in 1981, for the greetings cards. They were created into toys in 1983. They include:
Bedtime - Boy - Moon and star
Birthday - Boy - Cupcake topped with a candle
Cheer - Girl - Rainbow
Friend - Girl - 2 yellow daisies
Funshine - Girl - Yellow smiling sun
Good Luck - Boy - Green 4-leaf clover
Grumpy - Boy - Blue rain cloud
Love-a-lot - Girl - 2 hearts; 1 pink, 1 red
Tenderheart - Boy - Big red heart
Wish - Girl - Rainbow with many stars

After the originals more were added later on. These are known ones, there might be more out there not listed. They include:

Grams - Girl - Bouquet of roses. Also had a pink scarf.
Harmony - Girl - Music notes topped w/hearts OR 3 hearts
Hugs - Girl - Heart w/star peeking out. Also wore a diaper.
I-love-you - Girl? - Nothing is known about this bear. Mentioned in several news articles though.
Prize - Boy? - Shield
Secret - Boy - A lock (with keyhole) shaped like a heart
Share - Girl - Ice Cream Float with 2 straws
Take Care - Boy? - Apple with a bite missing. Only appeared in 1 book ("Care Bears and the Big Sneeze"). Never made into a toy.
Tugs - Boy - star inside a diaper. Also wore a diaper.

After the Care Bears a set of cousins or animals were added in 1985. They include:
Brave Heart Lion - Boy - Red heart topped with a crown
Bright Heart Racoon - Boy - Lightbulb in the shape of a heart
Cozy Heart Penguin - Girl? - Heart topped with a hat
Gentle Heart Lamb - Girl - Pillow in the shape of a heart
Lotsa Heart Elephant - Girl - Trapezoid weight with hearts
Loyal Heart Dog - Girl - Bar with heart hanging below, like a sign
Playful Heart Monkey - Boy - Heart balloon with a hat and candy
Swift Heart Rabbit - Boy - Heart with wings

Forest Friend - UK - Boy - Tree with rabbits OR bear and rabbit hugging beneath a tree

Friends
The Care Bears had many "friends" that helped them along. Most were the children in the stories themselves. I'll include them as I find them. They include:
Cloud Keeper - Chubby Grandpa-type in overalls. Caretaker of Care-a-lot.
Kim & Jason - "The Care Bear Movie" (1985) - 2 children that over come their problem to help another child.
Enemies/Villians
Of course there are Villians, they could not fight the feelings of the world without it. They include:
Evil Spirit - "The Care Bear Movie" (1985) - Magic book possessed by an evil spirit.
Dark Heart - "Care Bears Movie 2: A New Generation" (1986) - Red-headed kid who can shape shift. Does turn into a "good guy" by the end of the movie.
Professor Cold Heart - Man in purple and blue, covered in icicles and has BLUE skin. He was the only villian made into a toy.
Frost Bite - Cold Heart's sidekick - a spidery-looking man in a blue sweater.
No Heart - Man that only has large red eyes. Wears a long black robe.
Beastly - Sidekick of No Heart's - warthog looking.
Shreaky - No Heart's Niece - girl that screams when she doesn't get what she wants.
Evil Wizard - "The Care Bears Adventure in Wonderland" (1987) - Evil wizard who kidnaps a princess.
Dim & Dum - Evil Wizard's sidekicks - look a lot like Beastly. Never get anything right.
Care Bear Terminology
Familiar terms in the Care Bear world:
Care-a-lot - Place where the Care Bears live. It is in the clouds filled with bright colors everywhere. Rainbow sliders.
Rainbow Sliders - Rainbow slides used as pathways.
Forest of Feelings - Place where the Cousins live. It is a brightly colored forest halfway between Care-a-lot and Earth.
Caring Meter - Visual display of how much the world is caring and if the Care Bears are needed. Measures hope and love.
Rainbow Rescue Beam - A transportation device used to get Care Bears where they are needed and back to Care-a-lot.
Care Bear Stare - Positive energy sent from the Care Bears tummy symbols meant to "break down" a bad guy.
Counsins Call - the Cousins version of the Care Bear Stare, just using their voices and not the symbols.
Star-a-scope - A telescope shaped like a star used to look down on Earth for trouble.
Cloudmobile or Rainbow Roller - vehicles that the Care Bears use to get around in.
