SMOKED MARINATED CHICKEN
This meal I "thunk up" quickly one night. This is a great summer Barbeque entree and very easy.
I have a typical backyard propane grill. I was going to throw away a rusted old cookie sheet when I realized I could use it as a tray for wood chips to transform my grill into a hot smoker! To cook this recipe, first heat your grill until hot. About 5 minutes before you want to start cooking, place pan of wood chips (mesquite, so far is our favorite) on bottom grill and allow to get hot enough to smoke. Turn flame down to low-med.
HERE'S WHAT YOU NEED:
Large Bowl - 1
Tongs
Wood chips (hickory, mesquite, applewood, etc...)
INGREDIENTS:
3# - Chicken (quarters, leg/thigh)
4 to 6 oz. - Wishbone or other brand thick Italian dressing (NOT creamy italian)
Salt
Pepper
Granulated Garlic
Minced fresh cilantro
PROCEDURE:
1. Rinse chicken and pat dry with paper towels. Season with salt, pepper and garlic.
2. Place chicken in bowl and coat with dressing. Marinate for a minimum of 15 minutes.
3. Prep grill as noted above. When chips are smoking, place chicken pieces on top shelf of grill and cook until done (about 20-25 minutes over low-med heat).
4. Arrange on a platter and sprinkle with cilantro. Serve with herb roasted potatoes, grilled corn, and tomato-cucumber salad.
TIPS:
I have never seen a more beautiful caramel color on chicken than with this recipe! Check it often during the cooking process and turn every 5-8 minutes. Don't worry if the smoke from the chip dies out, the flavor has already permeated the meat!!
