A Very Popular Wing Sauce

I used to work for a place called the Candlelight Inn in Scarsdale, NY. They always had the best wings - even before I worked there. Now, I cannot divulge the WHOLE secret, but, this is the base of the sauce.

YIELD: 1 Gallon + 1 Pint (approx)

WHAT YOU NEED:

6 qt. saucepan - 1
Wire Whisk - 1
Imagination - unlimited

INGREDIENTS:

2# - Unsalted Butter
1# - Flour
1 Gal. - Durkee Red Hot Sauce

Procedure:

1. Melt butter in saucepan over medium heat.
2. Add flour and whisk in until smooth and thickened. Allow flour to cook for 2 minutes.
3. Stir in hot sauce and simmer 5 - 6 minutes.
4. Remove from heat and cool. At service allow sauce to come to room temp for better handling.

TIPS:

*** For milder sauce increase butter by 1/2 pound and flour by 1/3 cup to your tastes. For more heat, add your favorites hot peppers minced into butter or sprinkle cayenne powder to sauce before serving.
