Tabbuleh
Description: A nice summer salad that is light and flavorful, the possibilities are endless. Goes great with grilled fish.
Ingredients:
1 Cup Bulgar Wheat
1 1/2 C Boiling Water
1 tsp. Salt
2 tsp. Fine Chopped Garlic
1/4 Cup Lemon Juice
1/4 Cup Olive Oil (extra virgin is best)
2 each Chopped Tomatoes
1 each Med. Cucumber, peeled and seeded, chopped
2 Tbsp Chopped Parsley
1 ea. Chopped Green Onion
Directions:
Pour boiling water over bulgar wheat, cover and let sit 30 minutes. Add garlic, lemon juice and olive oil cover and refrigerate 2 hours. Toss in remaining ingredients and serve
