Bean Hole Chicken and Potatoes (serves 4)
1 whole roasting chicken
butter or margarine
4 medium potatoes
1 small pkg. stuffing mix and ingredients needed

Mix stuffing mix and stuff chicken.  Butter chicken and wrap in a heavy duty foil.  Wrap package in damp cloth such as burlap or muslin.  Wrap scrubbed, pierced potatoes in foil.  Place chicken and potatoes in bean hole.  Cook as directed for bean hole cooking.  You can also cook in a bed of coals.

Dutch Oven Pork Chops
(serves 6-8)
6-8 pork chops
6-8 raw potatoes, peeled and sliced
4 onions- peeled, sliced thin
milk
salt and pepper
butter
flower

Grease bottom of Dutch Oven; brown pork chops on both sides.  Remove chops and layer onions and potatoes in pot.  Dot each layer with bits of butter, sprinkle with salt and pepper and flour.  Place pork chops on top.  Pour in milk to top of potatoes.  Cover and put in pit for 3 hours.  Could also be baked in a dutch oven.

Bean Hole Hamburger
(serves 16)
3 onions
1 Tbs. Crisco
3 1/2 lbs hamburger
10 medium potatoes, sliced thin
salt and pepper

Fry onions in Crisco.  Layer hamburger, onions, and potatoes in oven, ending with hamburger.  Cover and cook 2-4 hours or bake in dutch oven.

Scalloped Ham-Potato Casserole (serves 10-12)
4 slices ham (1/2 inch thick)
10 medium potatoes, sliced thin
salt and pepper
2 cups milk
1 Tbs. flour
2 onions, sliced

Layer ham, potatoes, onions, end with ham.  Season, cover with milk mixed with flour.  Cook 2-4 hours in bean hole or bake in dutch oven.
