RECIPE BOOK
McClellanville Caviar

1-1/4 cups shrimp, deheaded
2 cans black beans, drained and rinsed
1/2 cup red and yellow bellpepper, chopped fine
1/2 cup purple onion, chopped fine
1-1/3 cup medium salsa
1/2 cup lime juice
4 tsp. honey
4 tsp. vegetable oil
Salt to taste
Old Bay seasoning

Boil shrimp in water seasoned with Old Bay for about 4 minutes - do NOT overcook!  Chill, then peel and chop fine.  Add other ingredients and chill 2 hours or overnight (overnight is better).  Serve with crackers.
