San Clemente Shrimp
1 pkg. fettucini noodles
1 tsp. butter
1 tsp. garlic
1 tsp. shallots
(12) 21-25 count shrimp, peeled and with tails on
1/2 tsp. jalapenos
1/2 tsp. lime zest
2/3 c. diced tomatoes
3 tsp. cold butter
1/4 c. tequila
Lemon
Chives

While preparing shrimp, cook linguini noodles according to package.  Toss into saute pan minced garlic and shallots.  Add shrimp and saute for 1 min.  Add jalapenos, lime and tomatoes.  Deglaze pan with tequila and add cold butter.

Pour sauce mixture over cooked fettucini.

Arrange shrimp around pasta with tails sticking up.

Garnish with lemon and fresh chives.
