Cheese Borek

  I'm not sure how to describe Borek (pronounced bore-WRECK) for those who haven't tried them...cheese-filled miniature egg rolls comes close. For the sake of convenience, we use egg roll wrappers instead of puff pastry, which is called for in the original recipe. I warn you now that you can't eat just one of these things. (Rick)

 

Ingredients

  • 1/2 lb White Cheese (or Feta cheese, if you like Feta)
  • 3 TBS Parsely, minced
  • 1 TBS Butter
  • 1 Egg yolk
  • 3 TBS Mushrooms, chopped finely
  • 3 TBS Onion, minced
  • (1/2 tsp Lemon juice, only if you use Feta cheese)
  • 1/4 tsp Pepper (black or seasoned)

Directions

  1. Saute the mushrooms in butter for 4-5 minutes, then set them aside to cool
  2. Mix parsley, cheese, and egg yolk together; add the mushrooms.
  3. Packaged egg roll wrappers are rectangular; cut them into triangular shapes as illustrated here. Place cheese mix onto the wide end of the triange and roll the wrapper. Seal the edges with egg yolk.
  4. Place the borek one inch apart on a greased baking sheet.
  5. Glaze the borek with a beaten egg and bake at 350 degrees until the borek are golden brown (about 30 minutes).
