Zesty Caribbean Chicken Breast
This is another BBQ recipe from Rick. His
kids actually request this one.
- 1/4 cup vegetable oil
- 1 teaspoon grated lemon peel (optional)
- 1/4 cup lemon juice
- 1 tablespoon paprika
- 1 tablespoon honey
- 1 teaspoon garlic salt
- 1 teaspoon ginger
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon hot pepper sauce
- 1 teaspoon of red peppers (or other "heat")
- 6 boneless, skinless chicken breast halves (about 1/12 pounds)
- Combine oil, lemon peel, lemon juice, paprika, honey, garlic salt, ginger,
oregano, and hot pepper sauce; mix well and pour into a plastic food storage
bag.
- Add the chicken and marinate in the refrigerator for at least 30 minutes.
- Remove chicken from lemon juice mixture and grill 3 to 5 minutes per side
or until chicken is no longer pink in center
