This recipe is delicious and easy. Allow about 8 hours for marinading.
Ingredients
- 1/3 cup olive oil
- 3 tablespoons minced fresh parsley or 1 tablespoon dried parsley flakes
- 1 tablespoon minced fresh thyme or 1 teaspoon dried whole thyme
- 1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried whole rosemary
- 1-1/2 teaspoons minced fresh sage or 1/2 teaspoon dried whole sage
- 1 teaspoon grated lemon rind
- 3/4 teaspoon minced fresh marjoram or 1/4 teaspoon dried whole marjoram
- 3/4 teaspoon minced fresh savory or 1/4 teaspoon dried whole savory
- Pinch of ground allspice
- Pinch of ground red pepper
- 4 chicken breast halves, skinned and boned
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Garnish: lemon wedges
Directions
- Combine first ten ingredients; stir well.
- Place chicken between 2 sheets of wax paper; flatten to 1/4-inch thickness, using a meat mallet.
- Rub herb mixture on chicken; place in a 13- x 9- x 2-inch dish and cover, or use a ziploc bag. Chill 8 hours.
- Sprinkle chicken with salt and pepper.
- Grill over medium coals 2 minutes on each side or until done. Garnish, if desired.
