Peppers Penne

You won't believe how simple and delicious is this recipe from Barilla's "Perfect Pasta" cookbook.


 

Ingredients

  • 8 ounces (Barilla) Penne or Mostaccioli pasta
  • 1 tablespoon olive or vegetable oil
  • 1 each red, green and yellow bell pepper, cut into long, thin strips
  • 1 jar (26 ounces) (Barilla) Marinara Pasta Sauce
  • 2 tablespoons grated Parmesan cheese

Directions

  1. Cook penne according to package directions; drain.
  2. Meanwhile, heat olive oil in large skillet. Add bell peppers; cook and stir over high heat 1 minute. Reduce heat; stir in pasta sauce.
  3. Cook 5 minutes over medium heat, stirring frequently.
  4. Pour pepper mixture over hot drained penne. Sprinkle with cheese.

Makes 6 to 8 servings

Variation: Add 1 cup coarsely chopped pepperoni with the pasta sauce.
