Mary Kay Nowak Letters (whose Mom is a Mollica) is one of the most active contributors to the Mollica Family Web Site. She sent in this recipe, which came originally from her first cousin once removed, Kathi Bingham Levine (Mary Kay and Kathi have Rosario Mollica as their common ancestor).
It's a quick and easy breakfast that ensures that everyone gets it exactly like they like it! We do this all the time if we have guests stay over and serve them on paper plates so there's not much clean up!
Ingredients
- flour tortillas (2-3 per person)
- scrambled eggs (about 1-1 1/2 per taco)
- grated cheddar cheese
- diced tomatoes
- diced cooked potatoes
- bacon strips (one per taco)
- salsa (like Pace Picante)
Directions
- Prepare all the fixins and put them in separate small bowls (best to serve this buffet style so everyone can make their own tacos).
- Scramble the eggs and while doing that, you can heat the tortillas in a damp dishtowel in the microwave. About a minute per 5 -7(until they're almost hot). Keep the tortillas wrapped in the dishtowel while serving to keep soft and warm.
- Put the eggs in a bowl next to the tortillas and have the guests each make their own taco. You can improvise on the fixins with onions, sausage, or anything else you like in there.
