REMEMBER: All ingredent packages must state "Kosher for Pesach", except for natural items such as eggs and produce that is not packaged. Sodas can even be problematic due to corn sweeteners.
Matzo Balls
|
7 eggs (may use 1/2 eggs and 1/2 beaten whites or egg whites only)(make sure to crack each egg into a seperate bowl and then transfer into the mix to avoid blood spots)
1½ t. salt
½ c. club soda
1 t. dried minced onion
½ c. vegetable oil or melted pareve margarine
dash of pepper
1 t. parsley flakes
dash of ginger, nutmeg & cinnamon
1½ to 1¾ c. matzo meal
Beat eggs; add next 7 ingredients. Fold in matzo meal. Refrigerate for several hours. With wet hands, roll into balls. Drop in boiling water, with 1 tbsp. Passover chicken soup mix; cover immediately. Do not peek! Boil for 1 hour. To make ahead of time, freeze on cookie sheet. When frozen, put into airtight containers.

Pesach Mandel Bread
|
3 eggs (make sure to crack each egg into a seperate bowl and then transfer into the mix to avoid blood spots)
1 cup vegatable oil
1 cup sugar
¼ tsp. baking soda
½ cup sugar-cinnamon mixture
2 cups cake meal
¼ tsp. Salt (sift these 3 dry ingredients together three times)
1 cup chopped & toasted nuts
1 tsp. Passover vanilla extract
½ cup white raisins or 1/2 chocolate chips (optional)
Beat eggs on "High" for 5 minutes. Then, gradually add sugar and beat for 5 more minutes. Slowly add oil and beat additional 3 minutes. Add vanilla. Add dry ingredients by hand. Add nuts & options. Refrigerate dough for 1 hour. Pre-heat oven to 350°. Make 3 rolls of dough and pat with greased hands to make even. Sprinkle the rolls with cinnamon & sugar mixture. Bake at 350° for 20-25 minutes. Remove from oven and slice on an angle. Place on 2 cookie sheets and lightly sprinkle with remaining sugar & cinnamon mixture. Turn oven "Off" and let mandel bread cool in closed oven for added crispness.
