Fruit Pizza
Crust:
2 cups flour
2 tsp. baking powder
1 tsp. salt
1/4 cup shortening
2/3 cups milk
Sift together flour, baking powder, and salt. Cut in
shortening and add milk to make soft dough. Knead lightly. Press in 2 well greased 9 or
1/4 cup shortening or 10" pie pan or a large
pizza pan.
Fruit:
1 - 16 oz. can peaches
1 - 16 oz. can cherries
1 small pineapple chunks
(Other fruit may be substituted)
2 cups shredded cheddar cheese
Cover crust with well drained fruit in an attractive design and top
with cheese.
Topping:
1/2 cup brown sugar
1/2 cup sifted flour
1/4 cup butter or margarine
Mix topping ingredients together and sprinkle over fruit. Bake in
preheated oven 25 minutes. Serve warm or cold.
Good either way.
