Hello on this page I will be discussing cake decorating. I hope to add lots of photos of the various types of cakes that I have decorated. I have many photos, but unfortunately they are not of the best quality. I have been decorating for at least fourteen years now. I have taken Wilton courses in both basic and advanced cake decorating. I work now as a Deli/Bakery manager, so I get a lot of opportunities to decorate. I must say that I enjoy decorating for my grandchildren most of all. I get to do most of their birthday cakes, as well as any type of sports team cakes that they need made.

I recently had the opportunity to decorate a five tier wedding cake for a friend. They were free standing tiers that were placed on curved clear acrylic stands. The icing was white buttercream and the roses were done in a royal blue color. The layer sizes were "8"inches, "10" inches, "12" inches, "14" inches, and the final layer was "16" inches. The cakes themselves were done in alternating layers of white and chocolate cakes. I was very proud of the cakes. They turned out quite lovely. My friend, the bride was, thrilled with the look of the cake! After all that is what is most important, to please the person the cake was made for!

This is the first Diploma that I received from Wilton. This is for the basic course of decorating.This is the second diploma that I received from Wilton. This is for the advanced course on cake decorating.

Baking Diploma


The above certificate is from The American Institute of Baking, in Manhattan, Kanasas. It is for the completion of the In-Store and Retail Baking Technology course.I worked on this course as a requirement when I was an apprentice baker. This couse completion was required to complete my baking apprenticeship. I am considered a secondhand benchhand. This is a term used to describe different levels of baking achievments. To be considered a "Master Baker," I need to complete training in scratch mixing. Altough I have a great deal of knowledge in this area, I don't live in an area now where there are any types of couses available to complete my requirements. I do hope to someday complete the required courses to acheive a "Master Baker" degree.
