MARY'S APPEALING APPETIZERS



Annapolis Crab Cakes

12 English muffins
1 c. butter / margarine, room temp.
10 pcs. Old English Cheese Spread, room temp.
2 tbs. mayo
1/4 tsp. garlic powder
2 tsp. bay seasoning
10 oz. crabmeat, fresh or backfin, picked

1. Split muffins; set aside.
2. In med. bowl, mix butter, cheese, mayo, garlic, bay.
3. Carefully blend crab into mix.
4. Cut in quarters and place on cookie sheet.
5. Broil until lightly browned on top.

Yield: 48 appetizers


Bacon Pinwheels

one loaf fresh white bread with crust
cream cheese, softened
sliced bacon

1. Trim the crust from the bread, cutting it into 1/4" lengthwise slices.
2. Spread each slice with cream cheese and roll like a jelly roll.
3. Cut rolls into 2 or 3 pcs. and wrap each in sliced bacon.
4. Fasten with toothpick.
5. Toast under moderate broiler heat, turning often until bacon is cooked.

Baked Brie (from Mrs. Chesla!!!)

2 tbs. butter
1 lg onion, chopped
2 tbs. minced garlic
8 oz. Brie, rind trimmed, cubed
8 oz. cream cheese, cubed
3/4 c. sour cream
2 tsp. lemon juice
2 tsp. brown sugar
1 tsp. Worcestershire sauce
1 round loaf Italian bread
assorted cut up veggies

1. Saute onions and garlic in 2 tbs. butter.
2. Microwave 2 min. on med. cream cheese and brie.
3. Whisk in onions, garlic, sour cream, lemon juice, brown sugar, and Worcestershire.
4. Season with salt and pepper. Cut off top of bread.
5. Remove center leaving about 3/4" of the shell. Fill with cheese mixture.
6. Replace top of bread. Wrap in heavy foil.
7. Preheat oven to 400F. Bake in oven 1 hr. Remove foil.

Serve with crackers and veggies.

Cocktail Frankfurters in Pastry

1 recipe pie dough
1 - 2 tbs. mustard
3/4 lb. cocktail size frankfurters
1 egg, beaten with 1 tbs. water

1. Preheat oven to 450F. Divide pie dough into 2 pcs. Roll out thin.
2. Arrange half of frankfurters on one sheet of dough with enough to wrap sides and ends.
3. Cut dough accordingly. Brush each frankfurter on all sides with mustard.
4. Pull sides and ends of dough upward, painting inner seams with egg wash.
5. Tuck in ends and seal main seam, pressing edges firmly together.
6. Arrange packages seam side down 1" apart on buttered cookie sheet.
7. Repeat with other franks and dough.
8. Brush all tops and sides with remaining egg wash, then prick tops with a fork.
9. Chill 10 min. before putting in oven. Bake 10 min. or til golden.

Yield: 12 or more servings

Crabbies

1 can crab meat
1/2 c. margarine
English muffins
1/4 lb. butter
1 jar Old English cheese spread

1. Combine ingredients and spread on muffins. Cut into quarters.
2. Place under broiler until hot.
