Welcome to my kitchen where you will find some of my favorite recipes that I have collected over the years. I like to cook the easy way, so I will try to keep these short and simple as possible. If you try any of these recipes and need any advice you can email me and I will get back to you as soon as possible.
I am making this a two part site, so the bottom half will be household tips that I think you might find interesting.
Lets get started here-take your shoes off and make a pot of
coffee. For it might take awhile for us both to get through this.
Dottie's Kitchen!
No Bake Cookies
2 cups Sugar...1/2 cup Cocoa...1/2 cup Butter...1/2 cup Milk
1/2 cup Peanut Butter...1/2 tsp. Vanilla...3 cups Oats
Combine sugar, cocoa, milk and butter in sauce pan.
Bring to a boil for 1 min. stirring constantly. Remove
from heat-Stir in remaining ingredients. Mix well. Drop
by teaspoonfuls on wax paper. Cool
Mexican Pie
3 cans Light Kidney Beans...Hamburger(sm pkg)...1 Onion
Salt & Pepper...1 Green Pepper...1 can of Tomato Sauce
Brown hamburger-add ingredients. Mix well. Make a
batter of thin cornbread mix and pour over top
of this in a long baking dish. Bake in oven for
an hour until top looks like it's golden brown. 300 degrees.
Banana Nut Bread
1/2 cup Butter...1 cup Sugar...2 Eggs...3 Bananas...
2 cups Flour...pinch Nutmeg...pinch Ginger... pkg.Walnuts
Cream butter and sugar together, add mashed bananas.
Combine all ingredients and bake 300 for an
hour in loaf pan. Done when top is golden brown.
Carrot Cake
2 cups Flour...2 tsp. Cinnamon...2 tsp. Nutmeg...
1 cup Oil(crisco)...2 cups Sugar...3 Eggs...1 cup Pecans
3 cups Carrots(grated)
Mix all ingredients. Lightly greased pan-bake at
325 for 1 hr. 10 minutes
Peanut Butter Cookies
1 cup Sugar...1 cup Brown Sugar...1 cup Crisco...2 Eggs
1 teas. Vanilla...1 cup Peanut Butter...3 cups Self-
Rising Flour...1/2 teas. salt
Mix all and drop teas. on greased cookie sheet.
Flatten with wet fork Criss Cross. Bake 325-10 min.
Apple Cobbler or Cherry
Melt 1 stick butter in casserole dish-combine 1 cup
flour(self-r) and 1 cup of sugar. Add enough sweet milk and
make fairly thin batter. Pour into melted butter. Add fruit
(can of apple or cherry pie filling)on top. Bake in slow over 300 for 1 hour, or until golden
brown. This can be topped with vanilla ice cream while
still hot.
Peach Cobbler
Melt 1 stick of butter in long cake pan. Drain a
lg. can of peaches and place peaches in buttered pan.
Sprinkle with Cinnamon Sugar-Add dry cake mix(yellow)on
peaches & pour remining peach juice on top. Using fork to make
holes(this lets the juice go into cake mix). Bake at
300 for hour or until golden brown. Sprinkle again
with Cinammon Sugar after removing from oven.
Pickled Corn
Boil white corn and add 3 or 4 tablespoon of pick-
ling salt to gallon of water. Takes 3 weeks for corn
to pickle.
Yeast Rolls
2 packs Yeast...1/2 cup Oil(crisco)...1/3 Sugar...pinch
of Salt...2 cups Warm Water...1 Egg...2 cups Self
Rising Flour
Add yeast in water-add sugar, oil, salt, flour
and eggs. Mix well-Roll our onto flour wax paper and
cut into biscuit rolls. Wait for one hour for the
rolls to rise and then bake at 350. You can check
after 10 min. to see if done and if so, broil the
top and then remove-butter top while still hot.
Stuff Peppers
Peppers...Onions....Hamburger...Rice...Tomato Juice
Egg
Remove inside of peppers-mix in bowl hamburger, chop-
ped onions, rice, egg and add a little tomato juice
to mix well. Then stuff peppers and cooked in tomato
juice-if juice doesn't cover peppers then add a
