Colourful Smarties Cookies
1/2 cup butter or margarine
1/2 cup sugar
1/2 cup firmly packed brown sugar
3 eggs
1 t. vanilla
1 cup peanut butter
4 1/2 cups rolled oats
1 t. baking soda
1 cup SMARTIES
Combine butter, sugars, eggs, vanilla and peanut butter. Then add oats and baking soda. Then mix in the SMARTIES. Drop on a baking sheet and bake at 350F for about 12 minutes.
I am a really busy mom and just don't have the time to make fancy meals for my family but I still want them to eat nutritious food. Here are some of my favourite easy meals. This page changes frequently so keep checking back for more recipes!
Oatmeal Apple Pancakes
1/2 cup quick oats
1 1/2 cups whole wheat flour
1t baking soda
1t cinnamon
2 cups soymilk (or cow's milk if you must!)
2 eggs
2 small apples, peeled and diced
Soak oats in milk for a few minutes. Heat oil in frying pan. Beat eggs into oat mixture. Mix the flour, soda, and cinnamon together and then add to oat mixture too. Stir in diced apple but careful not to overmix! Spoon into frypan and flip when bubbles stay around edges. Serve with real maple syrup. I just love these healthy pancakes. They make a nutritious and tasty breakfast.
Corn Casserole
1 can of corn, creamy style works best
4 eggs
1 1/2 cups of mild cheddar
Preheat oven to 350F. Mix all ingredients together and pour into baking dish. Bake for about an hour. Couldn't get much easier!
Grilled Mushrooms
1T soy sauce
1T red wine vinegar
1T olive oil
1T lemon juice
1/2 t dried basil
1 clove of garlic
1 package of mushrooms
Marinate mushrooms in mixture for about an hour. Grill for 2 minutes on each side. Easy, eh?
Easy Pita Pizza
This is an easy idea that can be prepared in advance and then frozen for quick meals. All you do is use pita bread as the pizza crust and top it with slices of mozzerella cheese, vegetarian pepperoni, tomato...whatever you wish, and bake them in the oven at 450F for 12-15 minutes. SO EASY!
Tangy Bean Salad
1 can of garbanzo beans (chick peas)
1 can of pinto or kidney beans
1 can of black beans
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1/4 cup chopped yellow or orange pepper
1/4 cup olive oil
1/4 cup red wine or apple cider vinegar
1t.salt
1t.garlic powder
pinch of cayenne
pinch of chili powder
Rinse beans in cold water. Add onion and peppers. Mix oil, vinegar and seasonings together and pour over bean mix and voila! ...easy bean salad.
Homemade Mayonaise
3 eggs
1 1/2 t salt
6T vinegar
3 cups of canola oil
Beat eggs in a food processor with salt and vinegar. Slowly add oil while continuing to beat. Be very careful not to pour the oil in all at once or the mayo will be runny. Pretty easy but much healthier than store bought mayo!
Healthy Cake
1 mashed banana
1/2 cups butter
1t vanilla
3 eggs
3 cups flour
1/4 wheatgerm
1t baking soda
3t baking powder
1 1/2 cups water
1 1/2 cups raisins or dates
Preheat oven to 350F. Mix the butter with the mashed banana then add the vanilla, eggs and water. Add the flour, wheatgerm, baking soda and powder and mix well. Then add fruit but don't OVERMIX! Pour into greased 9x13 pan and bake for 25 minutes. Cool, then eat. Delicious!
