Ingredients : Tamarind/Tamcon paste, Asafoetida(a small piece), Dhania(2 tsp), mustard seeds, dry red pepper(2-3), channa daal(2 tsp), methi seeds(2 tsp), onions, carrots or okra/ladiesfinger.
Chop onions, carrots or ladies finger
into small pieces.
In a hard bottomed vessel, saute mustard
seeds.
After the seeds splitter, add
the onions and fry them till golden brown.(If using the other vegetables,
just boil them in salt water to cook).
Add the tamarind extract or tamcon paste dissolved
in water. Let this boil for sometime.
In the meantime, grind together asafoetida,
dhania, dry red pepper, channa daal and methi seeds after frying in 1/2
spoon oil.
When the mixture boils well, just add
the ground powder to it and let it boil for a few more minutes.
If the kuzhambu is very watery, just
mix a spoon of rice flour to a spoon of water and add to the kuzhambu.
This will give it some thickness.
Garnish with curry leaves.
