Maankottai kuzhambu
                                    (Maankottai=seed of mango)

Ingredients :  Raw green mango,  salt, urad dhal(1 tsp),  tamarind extract/paste,  whole pepper(1 tsp),  dry red pepper(6),  asaefoetida, mustard seeds,  curry leaves.

To prepare Maankottai :
Slice green raw mango into vertical strips.
Retain the seed part also.
Add salt to this,  and put it in a jar and shake the jar well.
Shake it once/twice a day for two-three days.
Do not add water...the salt and mango will water automatically.
After three days,  take just the mango pieces from inside the jar and dry in the sun.
In the evenings,  return the pieces to the salt in the jar.
Repeat this for a couple of days till the salt is absorbed by the mango.

To make kuzhambu :
Put one or two pieces of so  prepared mango in water and cook well.
Grind together red pepper, whole pepper, urad dhal, tamarind into a smooth paste.
Add this to the cooked mango.
Add salt, asaefoetida and let it boil really well.
Saute with mustard seeds and curryleaves.

Mode of eating:
Mix with cooked plain rice and serve as main course.
