Escoveitch Sauce - This sauce is a tangy blend of vinegar with chunks of spices, carrots, and Scotch Bonnet Peppers. It is
made to be used on fried fish filets or whole fish. Simmer sauce and marinate for 30 minutes. May also be used as a marinade for fred or boiled chicken.
