A simple sign tacked to a gum in the Inman valley
suggests there's something tasty in the nearby dams. And it also shows
that Carol Schofield is s serious yabbie farmer. She operates Galloway
Farm which is about 16 kilometres from Yankallila
on the road to Victor Harbor. Her series of dams are stocked with thousands
of tiny crayfish. "We try to create close an environment
as possible to the river" Lawn clippings are used for feed and they
have plenty of protein content. "We're feeding around
1000 per pond. They breed regularly and sporn every three months".
After they're out of the mud they're into storage and cleaning tanks
and then used for their meat ... with the shells being recycled into burley.
The water used is also recycled with a water garden acting as a natural
filter system. Carol does more than farm the yabbies - you can visit the
property for a full tour that includes a yabbie bake. "Tail
meat is the best eating part of the yabbie. You can also enjoy many other
parts. In addition to being eaten, straight from the water the meat can
also be pickeled and blended into pate". There's more than yabbies
on the farm and the tour includes looking at
the other aspects. If you like the peaceful surrounds of the valley enough
there's also a bed and breakfast available. The yabbie farm is especially
good for groups and has parking space for coaches. Galloway Farm Tours
