     Keep things SIMPLE, a theme or colour is always a good idea.Sometimes it doesn't matter what you serve but how you serve it.  A sandwich for lunch can be fabulous with a nice tablecloth(make it yourself) a couple of daises & some paper napkins in the same colour. Evening meals include candles, fruit, bowls of water with coloured stones & flowers or candles floating.  Create an atmosphere.
  Dips are always popluar - to sour cream or philadelphia cream cheese add either, a jar of corn relish, gerkin relish , or a packet of french onion, spring vegatable or any simple packet soup mix.  Servce with carrot & celery sticks, corn chips or biscuits.

Damper Dips are very popular here in Australia - In a bowl mix 2 cartons of sour cream with 2 tablespoons of mayonaisse, 1 packet of frozen spinach thawed,squeezed well and chopped, 1 finely chopped onion, 1 packet of french onion soup - Mix well - cut top of a damper (round bread loaf) pull out centre leaving nice big hollow - break bread into bits - fill hole with dip and place bread around the outside - when this is finished start tearing away the sides of the damper - very popular.  (Email me if you would like the hot cheese damper recipe)
