Tauna's Holiday Refrigerator Roll Dough

Ingredients

1 Package of Active Dry Yeast
1 1/2 cups of warm water (105-115 degrees)
1 cup of unseasoned mashed potatoes
2/3 cup of sugar
2/3 cup of shortening
2 eggs
1 1/2 teaspoons of salt
6-7 cups of flour

Dissolve yeast in warm water in large mixing bowl. Stir in potatoes, sugar, shortening, eggs, salt, and 3 cups of the flour. Beat until smooth. Mix in enough of the remaining flour to make dough easy to handle.

Turn dough onto lightly floured surface; knead until smooth and elastic, about 5 minutes.
Dough will start to pull apart and get stretchy.

Place dough in greased bowl; turned greased side up. Cover bowl tightly;

Refrigerate for at least 8 hours, but no longer than 5 days.
Dough will rise in refrigerator, so make sure to put dough in a bowl at least twice it's size.

Punch dough down; divide into 4 equal parts. Use 1/4 of the dough mixture for a normal pan of rolls.

Rolls You Can Make With This Recipe~

Casseroles~
Roll dough in small circles and place in round greased baking pan. Brush tops with melted butter. Cover with Kitchen Towel and Let rise until doubled.
It Takes Approximately 1-2 Hours to Rise, So Plan Your Mealtime Accordingly!

Crescent Rolls~
Roll 1/4 of dough into flat thin circle~cut like pie into 8-10 triangles. Roll from large to small end and place on greased cookie sheet curling into a half moon shape. Brush tops with melted butter. Cover with Kitchen Towel and Let rise until doubled.

Fancy Clover Dinner Rolls~
Place 3 Casseroles for each opening (See Instructions Above For Casseroles) in greased muffin pan. Brush tops with melted butter. Cover with Kitchen Towel and Let rise until doubled.

Heat Oven to 375 degrees and Bake for 15-20 minutes.
Turn Your Pan Around so that Your Rolls will cook evenly, and bake for the remaining time. Brush baked rolls with butter while still warm!
Oven Temperatures Vary, so Check Your Rolls After The First 10 Minutes to see how they are progressing.

Tips: Be sure Not to get your water too warm or it will kill your yeast, and your dough will not rise!

Also,Do Not use any more than the 7 cups of flour alloted~even when kneading your dough. If too much flour gets added, it can prevent your dough from rising!

Approximately 6-8 servings for each 1/4.

Tauna's Old Fashioned Cornbread

Ingredients

1 cup all purpose baking flour 1 cup of yellow corn meal 1/2 cup of sugar 3 teaspoons of baking powder 3/4 teaspoons of salt 2 eggs 1 cup non-fat milk 1/4 cup of corn oil

Heat Oven to 375 degrees. Prepare an 8 inch round aluminum baking pan with cooking spray.

Mix together, flour, corn meal, sugar, baking powder, and salt. Add, eggs, non-fat milk, and corn oil. Mix throughly. Pour into prepared baking pan, and Bake on middle rack in oven approximately 25 minutes.

Hint~About half way through cooking time, turn pan around 90 degrees in oven to insure even baking.

A Great Addition to those Wintertime Dinners! Serve with My Homemade Crock-Pot Chili, or My Homemade Crock-Pot Navy Bean Soup!

Approximately 6-8 Servings
