~Old Fashioned Fudge & Candies~
Nana's Old~Fashioned Homemade Fudge
Ingredients
2 cups sugar
2/3 cup milk
2 ounces unsweetened chocolate (or 1/3 cup cocoa)
2 tablespoons of corn syrup
1/4 teaspoon salt
2 tablespoons margarine or butter
1 teaspoon vanilla
1/2 cup coarsely chopped walnuts or pecans
Butter Loaf Pan, 9x5x3 inches.
Heat sugar, milk, chocolate, corn syrup and salt in 3-quart saucepan over medium heat, stirring constantly, until chocolate is melted and sugar is dissolved.
Cook, stirring occasionally, to 234 degrees on candy thermometer or until small amount of mixturee dropped into very cold water forms a soft ball that flattens when removed from water. Remove from heat; add margarine.
Cool, without stirring, to 120 degrees (bottom of pan will be lukewarm).
Add Vanilla beat continuously with wooden spoon until candy is thick and no longer glossy, 5 to 10 minutes (mixture will hold its shape when dropped from spoon)
Quickly, Stir in nuts, spread mixture into prepared pan, and cool until firm. Cut into 1 inch squares.
Approximately 32 candies
For Another Delicious Treat~Try This Fudge Variation!
Nana's Old Fashioned Penuche'
Substitute 1 cup of packed brown sugar, for 1 cup of the sugar, and omit the chocolate.Penuche' is another Wonderful Traditional Christmas Candy!
Hint~For a nicer looking "Presentation", I add a walnut or pecan half to the top of each piece of candy!

Nana's Christmas Divinity
Ingredients
2 2/3 cups of sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
1 teaspoon vanilla
2/3 cups of broken walnuts
Heat sugar, corn syrup, and water in 2 quart saucepan over low heat, stirring constantly, until sugar is dissolved.
Cook without stirring, to 260 degrees on candy thermometer or until a small amount of mixture dropped into very cold water forms a hard ball. Remove from heat.
Beat egg whites until very stiff peaks form. Continue beating while very slowly pouring hot syrup in a thin stream into egg whites.
(The slower you pour, the Better the Results!)
Add Vanilla and beat until mixture holds its shape and becomes slightly dull (Mixture may become too stiff for mixer).
Fold in nuts, and drop by teaspoonfuls from tip of buttered spoon onto waxed paper.
*Use 1 tablespoon less water on humid days.
Approximately 4 dozen candies

but she left behind some Wonderful Memories and Traditions!
Her Recipes, will Live On through My Daughters and Myself
