Ironically, after I made a comment the other day about Theme Thursday being on extended break, I received an invitation to participate in the newly created Thursday Challenge. The current theme is "Anything". Has anyone ever seen anything like this before?
John and Al discovered this strange looking, but colorful, caterpillar crawling on the back sidewalk the other day. None of us had ever seen anything like it before. After some researching, I discovered that this caterpillar is the cecropia-moth-caterpillar. The moths are also known as the robin moth. Cecropia moths are the largest moth in North America, with a wingspan of 5 to 6 inches.
I've had several people ask for the recipe for the chocolate zucchini bread I make, so I thought I would post it online and share with everyone. Here you go:
Eleanor's Chocolate Zucchini Bread
I add a cup of chocolate chips to make it even chocolatier
Ingredients:
2 C. Sugar
3 Eggs 2 ½ C. Flour
½ C. Cocoa
1 Tbs. Vanilla
1 C. Oil
2 C. Shredded Zucchini 1 tsp. Salt
1 tsp. Baking Soda
1 tsp. Cinnamon
¼ tsp. Baking Powder
Directions:
1. Beat sugar, eggs, oil and vanilla. Stir in zucchini.
2. Sift dry ingredients and add to zucchini mixture. Mix well.
3. Bake in two greased loaf pans at 350 degrees for one hour or until done.
Visited with Kenzie last night. She'll be walking and running on her own very soon. She had her first haircut, and I'll post pictures later this week. She is turning into an escape artist. She knows how to get out of her stroller, car seat and high chair already. She's too smart for her own good. Hard to believe she'll be one year old soon!
