Roasted Red Peppers

Ingredients:

3 Large Red Bell Peppers
Olive Oil
Directions:

Set your oven to broil.  Brush oil over peppers and place on a baking sheet or broiling pan.  Broil the peppers in the oven until the skin one each side is slightly blackened and starts to peel away.

Remove from the oven and set to cool.  Be very careful when handling them right out of the oven due do to hot steam and juices that might remain trapped inside.

Cut off the tops and rinse under cold water while peeling the skin off.  Scrap any remaining skin off with a knife or fork.

If they have not broken up already, then slice length-wise into 2 inch wide pieces.
