Vitamin Salad
Ingredients:

4 Cucumbers (sliced)
4 Green Peppers (sliced)
4 Tomatoes (sliced)
1 bunch Chives (chopped)
150 g Goat Cheese
1 Bunch Parsley (chopped)
50 ml Olive Oil
1 tbs Dry White Wine
Salt and Pepper

Preparation:

Mix all vegetables together in a bowl. Season with salt and pepper.  Mix the wine and olive oil and pour it on the vegetables.  Sprinkle with goat cheese. Refrigerate for 2 hours.  Garnish with parsley and chives.
