Make the oil at the beginning of spring. Go for a walk somewhere where there are flowering fruit trees. Collect blossoms from as many kinds of fruit tree as possible, preferably scented ones (apple, cherry, peach and apricot, etc).

Fill a small bottle with the blossoms and cover with a light carrier oil such as almond. Leave in the sun until the oil has become impregnated with blossom scent, strain, but add one fresh spring blossom to the bottle. Use 1/2 cup olive oil and 1 teaspoon of each herb. Use DRIED herbs. Combine the herbs with the oil, put the lid on tight and shake well. Shake the jarevery day for two weeks. Strain the herbs and pour the oil in a clean jar. Store in a dark place. These oils will usually keep for awhile, but because they are based in olive oil, they can go rancid if they set for too long. If it starts to smell like turpentine, throw it out and make more.
