Portabella Mushrooms If you're a mushroom lover, this simply can't be beat! |

Oriental Style
This is my personal favorite. Take a package of Portabellas (2 heads about 6" around for each person) and place bottom-side-up on a pizza pan, after spraying it with whatever non-stick spray you wish to use. Mix up a batch of marinade (about a cup-full) of Teriyaki Sauce and Soy Sauce, with a ratio of 2-times as much Teriyaki as Soy, and add just a dash of Sesame Oil to it. Pour the mix over the mushroom heads, filling them up. Let soak for about an hour.
Pour out most of the marinade onto the pan to help the other side of the mushroom stay moist and put it all in a 350 degree oven for about 25 minutes.
I like eating them with fried rice with diced-up chicken on the side (basically, chicken-fried rice).

Italian Style
This is my second personal favorite for these little wonders. It's a bit more involved but just as good.
First, you have to come up with a little bit of spaghetti sauce. My personal favorite is what I refer to as a meat-sauce, where we mix hamburger (yup, the cheapest type is best) in with my favorite tomato sauce and spice mix. When Susan makes spaghetti sdauce (and she's the chef for that, being half Italian - ALWAYS!), she puts in a pretty fair amount of garlic powder, oregano and a bit of basil. Then, take your Portabellas (2 heads about 6" around for each person) and place bottom-side-up on a pizza pan, after spraying it with whatever non-stick spray you wish to use, just like the first recipe. Pour about a teaspoon of Olive Oil over each mushroom head and ladel on the spaghetti sauce. Over that, place as many slices of pizza pepperoni as you like and put it all in a 350 degree oven for 20 minutes.
Once out of the oven, sprinkle on a liberal coating of Mozzerella cheese and put them back in for another 5 minutes, or until the cheese is good and gooie.
I like serving them with buttered noodles and parsley, along with some garlic bread and maybe a glass of wine. |

BBQ'd Style
This is simple in the extreme! Treat the mushroom heads like a hamburger. Simply put them on your grill (upside-down first) with a little BBQ sauce poured over them, and cook for about 5 minues. Turn them over and add a bit of BBQ sauce to the top side, cooking for another 3 minutes. Stick these critters on a bun with a bit of tomato slice and onions, and enjoy!
I think these are best with potato chips or potato salad on the side. |
