Egg Replacers

The following can be used to replace one large egg in a recipe.





Flaxseed

Combine 1 teaspoon flaxseed meal with 1/4 cup HOT water. Let stand 5 minutes.
(Refrigerate flaxseed in non-clear container to avoid it becoming rancid.)



Unflavored Gelatin Powder

Mix one envelope of unflavored gelatin with 1 cup boiling water. Substitute 3 tablespoons of this liquid for each egg.
(Refrigerate leftover portion. Then, microwave to liquify before using.)



Ener-G Egg Replacer

Mix 1 tablespoon Ener-G Egg Replacer with 2 tablespoons water.



Arrowroot/Soy

1 T arrowroot starch + 1 T soy flour + 2 T water




Cornstarch/Potato Starch

2 T cornstarch or potato starch mixed with 2 T water



Tofu

3 T tofu blended with the liquid of the recipe



Arrowroot

2 T arrowroot starch mixed with 2 T water



Soy

1 heaping T soy flour + 2 T water



Banana

1/2 banana, mashed



Flax Seeds

1 T flax seeds + 1/2 cup water
Blend for 1-2 minutes until the mixture is thick and has the consistency of a beaten egg white.



Using Eggs as a binder.

Mashed potato or advocado
Moistened bread crumbs or rolled rice (poha)
Tahini (sesame butter) and nut butters
White sauce (using nondairy milk)
